White Horse WINS "People's Choice" Award at Girls Scouts Annual Cookie Gala
On March 11, the Girl Scouts of Southeastern Michigan held their annual Cookie Gala at the Roostertail in Detroit.  Once again, Glenda Lewis of WXYZ-TV was Mistress of Ceremonies and "Cookie Diva".  The event included eight culinary creations using Girl Scout cookies as key ingredients. 

The Historic White Horse Inn was invited to participate by creating a dish using Do-Si-Do's. 
Eight creations from some of the area's top chefs, each built a dessert around a different Girl Scout cookie.  The People's Choice Award, based on balloting by the several hundred patrons at the Roostertail, went to the Historic White Horse Inn. The chef and owner, Tim Wilkins decided to break the dessert only mold that the event has been based on the last six years.  Tim said, "It's been a challenge, you look at these two cases of cookies and ask yourself, 'What the heck do I do with this?'"  His seared shrimp with a sweet chili pepper glaze and crumbled Do-Si-Dos was a massive hit. "For the first six years, everyone made a dessert. Wednesday, owner Tim Wilkins of the Historic White Horse Inn in Metamora, will break the mold. He was assigned Do-Si-Dos, the other peanut butter cookie. "I could do a killer cobbler," he said, but instead he decided to think outside the box.   He actually used that expression, by the way, and he also said he didn't want to take a cookie-cutter approach.  Without giving too much away, his recipe pairs the oatmeal and peanut butter cremes with shrimp."


Shrimp Do Si Dos
 
Ingredients:

2 sleeves - Do Si Dos Girl Scout Cookies

16 raw (tail on) Gulf Shrimp

10 oz. Asian Sweet Chili Pepper Glaze

2 Green Onions (finely chopped)

¼ Cup Chopped Fresh Parsley

Seasoning Salt to taste

½ Cup Water

  
Cookie Crumb Topping:

Crush cookies into a medium-fine consistency. The peanut butter in the cookie will prevent it from becoming too fine.   Add green onions and parsley to crumb mixture and toss. 

Gulf Shrimp:

Pull tail segment off shrimp and butterfly

 
General Directions:

Pour enough chili pepper glaze to coat shrimp in a bowl. Add a splash of water.  Set aside.  Pour remaining chili pepper glaze in a bowl to use for a dipping garnish. Set aside.  Heat a saucepan on the stovetop. No higher than medium heat.  Add shrimp to pan and sprinkle lightly with seasoning salt. Once shrimp has begun cooking, add ½ cup water, shrimp steam cook to a finish.   Shake pan and flip shrimp while cooking.   Shrimp are done when they are no longer grayish in color.  Toss shrimp in chili pepper glaze.  Coat shrimp evenly.  Place on plate and generously spoon cookie crumb topping over shrimp.

 

Garnish with a spoonful of chili pepper glaze on plate edge for dipping garnish.  Great for dipping Shrimp Do Si Dos.
